Yirgacheffe is also known as the coffees "champagne" region of Ethiopia. Literally translated as “Land of Many Springs,” Yirgacheffe has the ideal topography, elevation, and water sources to produce and process exceptional coffees.
The coffee is produced by several smallholders or families who bring their harvest to a washings station in the region, which is a very common practice in Yirgacheffe.
The coffee beans are dried in their cherry during processing, this way the mucilage will dry, and sugars from the cherry will migrate into the bean which will enhance the complex fruity flavors in the cup.
