We are roasting this coffee to order on our Roest roaster with a light profile that suites filter brewing. We will roast every Monday and ship every Tuesday. We will hold back any other products you order together with this coffee to ship all products at once. So when you order on Thursday, you coffee will be roasted and shipped in the upcoming week.

Family patriarch Alexis Ramirez devoted his life to agriculture by growing coffee in 1990 on land bequeathed to his wife Anabel by her grandparents. In 2015, the Ramirez-Navarro clan boldly took on the immense challenge of constructing their own micro-mill, "Los Campos," to take control of their coffee quality and traceability, no longer relying on the cooperative system. This spectacular coffee is one of the results of their incredible effort!

The Esperanza variety

Set your sights on the Esperanza: an F-1 hybrid crossing Sarchimor T-5296 and wild Ethiopia ET-25, designed by Central American coffee research institutes including World Coffee Reasearch. Boasting delicate flavor and an immunity to disease, Esperanza gives farmers hope in a changing climate. Meaning “hope” in English, the Esperanza carries promise for coffee's future.

Natural Thermic Anaerobic

The process is as follows: 1. Harvest ripe fruit. 2. Wrap cherries in black plastic to anaerobically ferment in a greenhouse heated to 40-45C, encouraging a gradual breakdown of the sugars and a partial caramelization. 3. Sun-dry for a period of about 30 days. 4. Remove from parchment for export. This revolutionary method results in a unique flavor characterized by funkiness, sweetness and fruitiness, as well as a velvety, perfectly balanced cup.

This coffee is packed in refillable cans, 125 grams.
