Tabi is a newer coffee variety developed by the Colombian Coffee Growers Federation (FNC). It's a cross between Timor Hybrid, Bourbon, and Typica varieties, offering a distinctive flavor profile.
Processing Method
1. Cherries are carefully selected based on strict ripeness criteria
2. Floated and hand-sorted to remove defects
3. 30-hour underwater fermentation
4. Gently washed after pulping
5. Dried under controlled temperature conditions
