This very exciting coffee has undergone fermentation in a closed environment without oxygen. This contributes a great deal to the taste of the coffee, giving it its complex fruity characteristics along with great clarity.
After a harvest by smallholders in the Guji region, the cherries are hand-sorted to remove over and under-ripe cherries. On arrival at the washing station, the cherries are soaked in water where healthy cherries sink to the bottom and damaged cherries will float and are skimmed off and removed.
The Washing Station is owned by Merkuria Merga a very well-known coffee professional in Ethiopia. He has worked in the industry for 23 years and is renowned for the high-quality coffees his washing stations produce.
