Description
From the highlands of Ethiopia's Guji region comes this exceptional Grade 1 organic coffee, cultivated by 500 smallholder farmers at elevations of 1,850-2,100 meters. The Guji region, named after the Oromo people who have farmed coffee here for generations, gained recognition as a distinct coffee region in 2002, separate from Yirgacheffe.
Each farmer tends an average of less than five hectares using traditional intercropping methods, growing coffee alongside food crops. This organic certified coffee combines local landraces with JARC varieties (developed by Jimma Agricultural Research Center), creating the distinctive character that sets Guji coffee apart from its unique microclimates.
Processing follows meticulous standards at Hadeso washing station: hand-picked cherries are pulped within 6-8 hours of harvest, fermented for 36-48 hours with frequent water changes, then thoroughly washed until all mucilage is removed. The parchment dries on raised beds under shade nets for 5-7 days, with regular turning and hand-sorting to achieve the pristine quality required for Grade 1 classification.
This fully washed lot delivers bright notes of lemon & lime soda, complemented by hops and bergamot - a clean, complex expression of Ethiopia's incredible coffee diversity.
