From the moderate climate of La Unión in Peru's Cajamarca region comes this thoughtfully cultivated coffee from Segundo Alarcon. A second-generation coffee farmer, Segundo tends to two distinct farms: El Limón at 1500 masl and La Palma at 1800 masl, where he grows Catuai, Caturra, and Catimor varieties.
The farms feature a diverse agroecosystem where coffee grows alongside fruit trees like banana, mango, and orange, creating habitat for local wildlife. Segundo's commitment to sustainable practices is evident in his organic fertilization methods, primarily using guinea pig manure and coffee pulp.
The meticulous processing begins at dawn when cherries are carefully selected, followed by flotation, depulping, and a 24-48 hour fermentation. The beans are initially sun-dried on-site before being transported to Jaén for final drying over 8-15 days.
