Description

Nestled in the highlands of Peru's Cajamarca region, at elevations of 1900-2000 meters, this exceptional coffee represents the dedication of ten small-scale farmers who are part of the Green Coffee Tree cooperative. The carefully selected blend of Typica, Caturra, Bourbon, and Catimor varieties offers a unique expression of this terroir.

Each batch undergoes a meticulous process: cherries are hand-picked, followed by a controlled three-day fermentation in sealed bags, and then dried in solar tents for 25 days under constant supervision. The cooperative's commitment to sustainability extends beyond organic certification - they maintain native shade trees, protect local wildlife, and employ natural farming practices.

The Green Coffee Tree cooperative, established in 2021, focuses on improving both coffee quality and farmer livelihoods. Their transition toward traditional varieties and investment in better agricultural practices reflects their dedication to sustainable coffee cultivation.
